  • a knob butter, plus extra for the dish
  • 1 tbsp balsamic vinegar
  • 400g mushrooms, sliced
  • 1 clove garlic, crushed
  • 200g spinach, chopped
  • 500g ricotta
  • 1 lemon, zested and juiced
  • 200ml vegetable stock
  • 12 fresh lasagne sheets
  • 50g parmesan (or veggie alternative), finely grated
  • green salad, to serve

 

 

 

 

 

 

Cooking Instructions:

 

Step 1:

In a large non-stick frying pan, heat 2 tablespoons of olive oil.

 

Sauté the onions with a generous pinch of salt over low heat for approximately 25 minutes until they become tender and develop a slight color.
